c. nonfat buttermilk
1-1/2
c. whole wheat or white flour
1/3
c. dried fruit (raisins, cherries, apricots, etc.)
1/4
c. chopped nuts (optional)
Directions

Combine oats and buttermilk; stir well and set aside. Combine flour, brown sugar, baking powder and baking soda. Stir to mix well. Add buttermilk mixture and vanilla. Stir just until dry ingredients are moistened. Fold in fruit and nuts.

Coat an 8x4 loaf pan with cooking spray. Spread batter in pan. Bake at 325 for 35 min. or until a toothpick inserted into the center comes out clean. Remove bread from oven and let sit 10 minutes. Turn loaf onto wire rack and let cool before slicing.
