Ingredients

tsp. freshly grated lemon peel
1/4
tsp. ground black pepper
1
cup crumbled feta cheese, about 4 ounces
Directions

Place spinach in large colander.
2.
In a large pot bring salted water to a boil.
3.
Cook orzo according to manufacturer's directions.
4.
Drain orzo and water through colander with spinach in it.
5.
Over medium high heat heat oil until shimmers.
6.
Add onion and cook, stirring occasionally, about 4 minutes, or until translucent.
7.
Add garlic and cook about 1 minute, stirring, until fragrant.
9.
Add orzo mixture back into cooking pot.
10.
Stir in feta, lemon peel, salt and pepper to combine.
11.
Serve warm or at room temperature.
