Ingredients

cups of Great Northern beans or white navy beans [Large size]
1/2
cup of extra virgin olive oil
2
medium tomatoes [diced]
1/2
cup of celery [diced]
1/2
cup of carrots [diced or a fine julliene]
Directions
1.
Wash the beans well and remove any stones.
2.
Add water and cook the beans on high for 1/2 hour. Remove from heat and drain.
3.
Add boiling water to beans and simmer for another 1/2 hour.
4.
Add the rest of the ingredients and simmer until the beans are cooked but still firm.
5.
Remove from heat and add: 2 tablespoons chopped fresh mint leaves and 1 tablespoon chopped fresh sweet basil.
7.
Garnish with a mixture of the ingredients below.
8.
1/4 cup chopped Armenian or Italian parsley
9.
1 can ripe [pitted] olives
