Ingredients
* 1 3/4 c. all purpose flour
* 3/4 tsp. vanilla extract
Directions

* Preheat oven to 350 degrees.
2.
* Grease 24 (2 1/2") muffin pan cups.
3.
* Measure all ingredients into large bowl.
4.
* Mix at low speed until well blended.
5.
* Increase speed to high heat 2 minutes.
6.
* Spoon batter into cups.
7.
* Bake 18 to 20 minutes or until toothpick inserted into center of cupcake comes out clean.
8.
* Cool in pans on wire racks 10 minutes.
9.
* Remove from pans and cool completely.
10.
* Frost when cool, chocolate frosting goes good on these.
11.
Makes 2 dozen cupcakes.
