Ingredients

cups sugar

cups white vinegar

cup white wine or apple cider

oranges, diced with rind

lemon, diced with rind

lime, diced with rind

medium onion, diced

clove garlic, minced

cup white raisins

3/4 ounces crystallized ginger, diced
2-1/2
pounds pears, unpeeled and diced

Directions

1.
Bring sugar, vinegar and wine to a boil and simmer for 15 minutes. Add all remaining ingredients and simmer for 40 minutes. Cool; refrigerate in covered jars for as long as 6 to 8 weeks.
