Pears pepper jam

A very special marriage between the sweetness of the pear and the surprise of the pepper

Servings:

3 half LB jars

Ingredients
3.3 LB pears (peeled & cleaned)
1.65 LB sugar
20 berries of black pepper
juice from 1 lemon
2 1/2 cups of water

Cooking Instructions
Step 1 1) cook/boil the sugar,pepper, lemon juice in the water for about 5 minutes
Step 2 2) Add the pears and cook till you get to 223°f ( stir often to prevent sticking to to pot and caramelizing
