Ingredients

inch ready made frozen pie crust
1.5
cups of pecan halves
4
large egg yolks
1/2
cup of refined cane sugar syrup
1/2
cup packed light brown sugar

tbsp softened unsalted butter
1/4
cup heavy cream
pinch salt
1
tsp vanilla extract
Need a strainer, a high heat spatula, a small bowl and a non reactive sauce pan

Directions

1.
Put an oven rack at the lowest part of the oven.
2.
Get the oven ready as the pie crust requires.
3.
Pre-bake the the frozen pie crust
4.
Once it is ready set aside to cool for about 10 minutes
5.
Put the pecans on the bottom of the baked crust
6.
Grab the sauce pan, combine the egg yolks, syrup, brown sugar, butter, cream and salt.
7.
Cook over moderate low heat and stir constantly with a high heat spatula (DO NOT LET IT BOIL)
8.
When the color is even and the mix seems to be thicker strain it into a small bowl and then add the vanilla
9.
Slowly pour the filling over the nuts in the pie crust so that you coat the surfac e
10.
Put a foil ring on the top of the crust to prevent over cooking.
11.
Change the oven temperature to 350 F.
12.
Bake for 20 minutes
13.
Let the pie cool thoroughly on the rack (about 45 minutes)
