Succulent dish perfect for Christmas and any other occasion when you need to feed more than 12 people

Ingredients

Large Pernil
12
cloves Garlic crushed
1/2
cup olive oil
1
yellow onion
3
lemons, cut in half
2
T salt
1
T Adobo
2
tsp coriander
1
tsp fennel seed
pepper
1
tsp dried mustard seed
Tropical fruit
1/4
C flour

Directions

1.
Pre-Heat oven to 375 degrees
2.
Cut small 1/4 inch holes throughout the pernil, making sure to keep fat skin side untouched
3.
Grind spices, onion, garlic in blender with oil
4.
Stuff Pernil with mixture
5.
Coat all sides of Pernil with Mixture
6.
Put it in an oven safe container with fat side facing up
7.
Cover with aluminum foil
8.
Put in oven, check on it every hour and baste.
9.
After the 5th hour (check with a thermometer to make sure it is cooked)
10.
Let it sit 15 minutes before serving
11.
Take remainder of sauce & stuff in bottom & put in food processor
12.
Mix in your favorite tropical fruit (e.g. mango, guava)
13.
Add salt to taste
14.
Add in a little flour (1/4C) drain and stir by hand
15.
Carve and serve with fruit mixture
