Peel the pineapple, keep the peel.

Core the pineapple and throw out the core.

Cut into 1 inch chunks.

Put the chunks and peel into a large pot.

Add water to cover the pineapple.

Bring to a boil and boil until the pineapple is soft.

Remove the pot from heat.

Put the lid on the pot and let it sit for 8 hours at room temperature.

Sift the pineapple juice thoroughly.

Sift the juice through a cheese cloth squeezing with your hands.

You want the smoothest juice possible.

Melt the sugar, stirring constantly over very low heat.

Add the sugar to the juice and mix.

Chill for a few hours.

Garnish with a pineapple and an orchid if you want to get fancy.
