Ingredients
Pizza Beer if Available (if not substitute a good Bock like Huber)
Sirloin Roast ( or any that you see fit) we prefer a big fat Sirloin between 5-8 lbs. Get a good Center Cut piece & have fat trimmed by butcher.

cloves of garlic (or a big spoonful of prepared)
2
Tbs Coarse Ground Black Pepper ( regular pepper is ok)
1/4
cup Seasame Oil (if out, use Olive Oil)
Directions
1.
Put Roast in Plastic Zip Type bag & pour at least 3 bottles of Pizza Beer or Bock Beer on top of roast.
2.
Chop Onion & Green Pepper Put in Bag
3.
Peel Garlic, smash with knife blade & chop up , put in bag.
4.
Pour all oil into bag.
5.
Let Sit overnight in Refrigerator. We recommend putting bag into a sturdy container in case you get a leaker

Remove roast from bag, place in a roaster or roasting pan.
7.
Dump the beer and veggies into pan.
8.
Use injector to inject the marinade in about 10-20 spots on the roast.
9.
Rub in salt & Pepper all over roast

Cover & Bake at 230 degrees until internal temperature is around 136 degrees (be patient will take a few hours)
11.
Turn of roaster or remove roast from oven. Leave covered for about 20 minutes.
12.
Carve that baby thin or thick, we prefer nice thin slices!

I would drink a good German Dopplebock with this dish or a rich Australian Shiraz.
