Description: Bread for all occasions. Can be refrigerated overnight & used as a pizza crust as well as an Italian Style Bread.
Ingredients
- 2 Cups Pizza Beer (if you don't have pizza beer use a malty unfiltered ale low in hop flavor Redhook Sun Rye works good)
7 cups all purpose flour (or flour of your choice)
2 dry yeast packets
1/4 cup Olive oil
1 Tablespoon Salt
2 Egg Whites
Directions
Pizza Beer Bread:
Warm 2 cups of beer in microwave for about 1 minute on high in a glass microwave safe bowl. Should be around 100-105F.
Mix in the yeast packets whisking briskly.
Add salt
Whisk in three cups of flour, one at a time
Cover with plastic & rest for 1/2 hour
Pour mixture into a large mixing bowl or if you have a
Kitchen Aid mixer use the dough hook.
Add Oil, reserve enough to oil up a glass bowl
Add the rest of the flour & use dough hook or knead by hand until the mixture forms a slightly sticky dough ball
Add dough to oiled bowl
Cover with damp kitchen towel or paper towel & put in a
nice warm spot to rest for an hour or so.
After an hour, knock down the dough by pressing down &
rolling it around a bit in the bowl.
Lightly flour a hard surface & separate the dough into 4
pieces.
Roll each piece into submarine shapes and cut a few slots into the top of each piece.
Pre Heat the oven at 350 degrees place on a baking stone or pan of your choice. Should take about 15-20 minutes.
Separate two eggs. Dump the yolks. Whisk the egg whites & brush on the bread after about 15 minutes.
You may check the bread by pushing on it or stick a toothpick or sharp knife into it. If the toothpick & knife are clean, your bread is probably ready.
Take bread out of oven, if you have more patience than I do, let it rest 10 minutes before cutting. Mine is usually torn apart before it makes it to the table!
