Description:

Chicken Tenders Marinated in Pizza Beer, Sauteed in Pepper, Onion, Garlic and Marinara. Served over Riggitoni's

Prep:

6hr marinade, 30 minutes cooking

Ingredients

3
lbs Chicken Tenders or Chicken Breasts thinly sliced
1
large Spanish Onion
1-2
Sweet Green Peppers (if you can find red or yellow, they make a really cool presentation)
4
cloves of garlic
1-2
jalapeno's or Cherry peppers (optional)
1/4
tbs salt
1/4
tbs pepper
3-4
sprigs fresh oregano (or 1/8 cup dry)
1-2
sprigs fresh Basil (or 1/8 cup dry)

bottles 24 oz of Pizza Beer (if not available substitute an malty English style ale. Fuller's ESB works good)
Marinara sauce of your choice (high quality jar or canned works fine)
1/8-1/4
cup olive oil
1
Package of Riggitoni
Fresh Romano, Parmesan or hard cheese of your choice to grate on top

Directions

The night before or morning of your meal:

Put Chicken into a zip type bag
3.
Add Salt, Pepper & Beer
4.
Seal & try to push as much air out of bag
5.
Give it a good shake & put it in the fridge until ready to cook

Mealtime:

Thinly chop onions & peppers
8.
Peel Garlic & smash with your knife
9.
Heat Skillet until warm & add Olive Oil (cook on MEDIUM)

wait a minute or so & add onions & peppers (Shake a small amount of salt & pepper on them)

Cook for 5 minutes or until onions are translucent

Add Garlic, Basil & Oregano

Stir these babies up real good for a minute or so. Careful not to burn the garlic

Push all veggies to the outside of the pan so that the middle of pan is available to brown the chicken.
15.
Turn heat to medium high & add a little olive oil to center of pan

Place tenders in middle of hot pan & sprinkle with salt & pepper to taste. Cook 5 minutes or so each side.

Reduce heat to medium & add marinara & remaining beer marinade & simmer for about 15-20 minutes until a rich thick sauce is apparent. If too thin you can add 1 can of tomato paste or simmer a bit longer.

In a big stock pot. Fill 1/2 way with water.

Put a few pinches of salt in

boil water

Add Rigitoni or your choice of pasta (follow directions on package)

When Pasta is done, drain DON'T RINSE, lightly sprinkle olive oil or add 1/4 stick of butter to hot noodles & stir 'em up.

Put pasta & chicken on plate, top with sauce & season with salt & pepper to taste.

Serve Pizza Beer Bread as a wonderful compliment
