Polenta Parmesan with Sauteed Chicken

Description:

This is a recipe I created using homemade cheese flavored polenta, sauteed chicken cutlets and my favorite marinara sauce from a friend of mine.

Ingredients

Cheese flavored polenta - cut into 1/4" thick slices

Chicken cutlets - cubed and sauteed in olive oil, garlic, onion , salt and pepper.

1/2 cups shredded Italian blend cheese
1/2
cup fresh grated parmesan cheese My Friends Sauce Recipe:

tbls. olive oil

shallots - minced

cloves garlic - minced
28oz. can Italian Plum Tomatoes

tsp. sugar

fresh basil leaves - shredded
salt + pepper to taste
Heat oil in a saucepan. Add shallots and cook for 5 minutes. Add garlic and cook for 1 minute. Add tomatoes, juice and all. Break them up and stir well. Add sugar, salt and pepper. Bring to a boil. Reduce heat and simmer for 10 minutes or til thickened. Stir in basil. Taste and adjust seasoning if needed.

Assemble Recipe:

Grease a 9 x 13" baking dish. Put a layer of sliced polenta covering the entire bottom of baking dish. Sprinkle with half the Italian blend shredded cheese. Add half the sauteed chicken on top. Then add half the marinara sauce. Repeat layers one more time.

Top with fresh grated parmesan cheese.

Bake uncovered at 350 degrees for about 25 minutes or til cheese is browned.

Remove from oven and let it set for about 15 minutes, before cutting and serving.
