Description:

Paella is a traditional Spanish dish that mixes rice and seafood with a mellow sauce. It is similar in theory to a jambalaya. The problem with most paella recipes that I have seen, is that they all seem to involve $30 worth of seafood, and sometimes require baking or special dishes. This is a version of a paella designed to be less expensive to prepare than most. My "Poor Man's Paella" can serve 6 for under $15 (less if you get a good deal on frozen fish or shrimp). It sacrifices some of the "high end" seafood, which do add a bit to the presentation of the dish, but the flavor is still outstanding. Feel free to substitute different seafood to meet your tastes and budget! This meal takes less about 45 minutes to prepare.

Ingredients

Large sweet onion

Cloves garlic

Tbsp. Extra virgin olive oil

Tbsp. Unsalted butter

cups water

cup risotto/Arborio rice

dashes Salt

tsp. ground black pepper

tsp. paprika
Pinch saffron
Dash ground red pepper

tsp. ground cumin

tsp. ground turmeric

lb. Medium shrimp, peeled & deveined
1/2
lb. Salmon
1/2
Red bell pepper
1/2
Green bell pepper
1/2
lb. Asparagus
Asian fish sauce

Directions

"Chunk" the onion into "petals", and thinly slice the garlic. Saute the onion and garlic in a large pan, using the butter and olive oil. Add the rice, lower the heat to medium, and stir frequently for 2 minutes. Add 1 cup water, 2 or 3 shakes of fish sauce, and all of the spices, and simmer, stirring occasionally. While simmering, cut salmon into 1/2" cubes. When the water is nearly all gone in the pan, add the salmon and shrimp. Continue to simmer, stirring occasionally. At this point, prepare the bell peppers by washing, removing the seeds, and dicing (remember, you only need half of each pepper). Wash the asparagus and cut them so that you have the tips (the whole spear is simply too large to be manageable). When the water is nearly all gone in the pan, add the remaining water and the vegetables. Simmer and stir occasionally. When the water is complete absorbed, serve.
