lbs pork riblets or rib tips (can use other cuts pork steak is good too)

Tb minced ginger (fresh)
1/2
cup Chinese Rice Wine (beer is a good substitute)
2
Tb fermented black beans (not latin american black beans!)
1-2
Tb chopped hot peppers (your choice here) optional
2-3
cups sliced Vegetables (peppers, broccoli, leeks, cabbage, asparagus) optional - choose one or two
Toasted sesame oil to taste
Directions

1.Cut pork into smaller pieces, this is really up to you depenging on how you wish to serve it. I often just leave the riblets (that the stupid name they give them locally) whole. But for Dim Sum you will want them cut into small bite-sized pieces.

2. Heat oil in pan with lid or Wok.

3. When smoking add garlic, ginger, and onions. Stirfry till slightly golden on edges.

4. Add black beans, wine, soy sauce, sugar, and hot peppers.

5. Add ribs, then add water to nearly cover them. Bring to boil then turn down to simmer.

6. Cook till tender. Time varies greatly with the pork. Usually about 20 minutes. But test this. Should not be falling off the bone, but not chewy either.

7. If liquid is too low - should half cover ribs - add more.

8. Add vegetables and cook on medium for about 4 minutes.

9. Mix cornstarch with water to form a slurry.

10. Add to boiling ribs, and mix. Should be thickened but not a paste. Usually you want it a bit thin as it will thicken. Add more water if too thick.

11. Taste sauce and add more salt, sugar, and soy to sauce to taste. Drizzle with toasted sesame oil and serve with lots of steamed rice or on top of a pan fried noodle cake.
