cups of shredded potatoes
1/2
white onion FINELY chopped (or shredded)
canola oil - enough to cover bottom of pan
Directions

Combine all ingredients except the canola oil. Form potato dough into flat "pancakes" the size of your palm (about 2.5-3 inches in diameter). Heat oil until drop of dough "fizzles" in pan. Drop "pancakes" into oil and heat until brown on both sides. Serve hot with sour cream.
