Description:

A variation of the traditional potato pancake, latke recipe. This one is made without eggs or flour.

Yields about 20 latkes

Ingredients

large Idaho potatoes
1
large onion
1/2
tsp salt
2
turns of fresh ground pepper
1/4
cup of oil (vegetable or peanut or use rendered fat from your main dish chicken or goose)

Directions

1.
Shred the potatoes (Don't rise afterwards, we want that starch)
2.
Shred onions. Mix the two and add the salt and pepper. The salt will extract even more moisture from your potatoes.
3.
Squeeze and drain the excess moisture.
4.
Heat 2 tblsps of oil in a heavy frying pan. Using a large spoon, drop the potato mixture into the hot oil carefully. Each spoonful is about 1/4 cup of latke mix.
5.
Cook until evenly browned then flip, about 6 minutes per side.
6.
Drain the latkes on a paper towel after frying and keep warm until service.
7.
Serve with apple sauce or sour cream.
8.
