Ingredients
⢠oil for frying (canola is recommended)
⢠between 1/4 to 3/4 cup all-purpose flour
Directions

1. Peel the potatoes and place in a bowl of cold water to avoid turning into brown color.

2. When everything is ready to prepare the latkas, drain potatoes. Place the onions and potatoes in a food processor fitted with a knife blade. Process until mixture is smooth. Then drain mixture very well.

3. Pour the mixture into a large bowl. Add the beaten eggs. And add salt and pepper. Add just enough flour so that the mixture holds together.

4. Pour oil into a large just enough to measure 1 inch into the deep frying pan. Over medium-high heat, heat the oil.

5. Drop 1/4 cup of potato mixture carefully into the hot oil.

6. Flatten the mixture slightly to make sure that the center will cook.
7.
7. Fry the mixture for several minutes on each side until turned to golden brown and cooked through.
8.
8. Drain the pancake on paper towel.
