Description:

Just got a new toy, my pressure cooker. Oxtail is the second thing I have made in it. Can't wait to play with it some more.

Ingredients

large oxtails (cut into pieces)
1
large yellow onion, slivered
2
cloves garlic, sliced thin
1
cup water
1
carrot, chopped
1
stalk celery, chopped
1
cup tomato paste
2
tsp homemade demi glace (always have this handy)
olive oil
flour
yuca

Directions

1.
Start up your pressure cooker and let it heat up
2.
Coat the oxtail with flour
3.
Heat up a large skillet with some olive oil
4.
Cook the onions until they are translucent
5.
Set onions aside
6.
Sear the oxtail so the juices will stay inside
7.
Put the onion, garlic, carrot, celery, and yuca in the pressure cooker
8.
Add the ox tail, water, tomato paste and demi
9.
Cover the pressure cooker and cook on high for 45 minutes
10.
Take all precautions advised with your particular machine
11.
Release the pressure (quick-release)
12.
Reduce heat to a simmer (mine does this automatically)
13.
Season with salt and pepper if desired
14.
There will be a big layer of fat on top.
15.
Do not discard, save this fat in a container for making sauces and gravy.
16.
Serve the oxtail with rice
