Pumpkin Dumplings

Prep:

Boil for 1o minutes then saute for 8 minutes.

Servings:

Ingredients
1/2 cup of canned solid pack pumpkin
1 large egg
1/2 tsp. of salt
1/8 tsp. of grated nutmeg
1/8 tsp. of (generous) baking powder
1/2 cup of all purpose flour
3 tbsp. of butter
1/2 cup of grated Parmesan cheese

Cooking Instructions
Step 1 Bring large pot of salted water to boil.
Step 2 Whisk pumpkin, egg, salt, nutmeg and baking powder in large bowl to blend.
Step 3 Mix in flour (dough will be soft).
Step 4 Dip 1/2-teaspoon measuring spoon into boiling water to moisten.
Step 5 Scoop up generous 1/2 teaspoon of dough and return spoon to water, allowing dough to drop.
Step 6 Working in 2 batches, repeat dropping 1/2 teaspoonfuls of dough into water, first dipping spoon into water to moisten each time.
Step 7 Boil dumpling until cooked through, about 10 minutes. Using slotted spoon, transfer to colander and drain.
Step 8 Melt butter in heavy large skillet over medium heat.
Step 9 Add dumplings.
Step 10 Sauté until beginning to brown, about 8 minutes. Transfer dumplings to bowl.
Step 11 Sprinkle with cheese and serve.
