tspn of each : cloves, nutmeg, garlic powder, allspice and cinnamon
Directions

First you season the outside of the chicken with 1 tspn of salt.

Chop the green bell peppers into strips and stuff inside chicken.
3.
Mix all the spices together to create a spice rub.
4.
Cover the chicken with the spice mixture and refridgerate for 24 hrs.

After you remove the chicken from the fridge, stuff the cavity with the garlic cloves, along with the peppers .

Preeheat the oven at 500 degrees

Roast 15 minutes in the preheated oven. Reduce heat to 450 degrees and continue roasting 15 minutes. Baste chicken with pan drippings, reduce heat to 425 degrees and continue roasting 30 minutes, to an internal temperature of 180 degrees F. Make sure the skin is crispy brown Let stand 20 minutes before serving.
