Quick and Dirty Thai Chicken and Noodles with Peanut Sauce

Description:

This was adapted from a recipe I read that my daughter downloaded from "The Biggest Loser Club" website. I saw technical problems with the original so I made my own changes to it. It is designed to be an easy to prepare, easy to make dish using pre-prepared ingredients as much as possible. Peanut oil was chosen for the stir fry because in my opinion it does better than other oils as a stir fry medium. If you feel comfortable you can substitute the oil of your choice keeping in mind that some oils do not stand up well to stir fry temps.

Ingredients

Peanut Sauce
-------------------
2T chunky peanut butter
1/2
cup chicken broth
2T soy sauce
2T Tabasco Sauce
1T Sesame Oil
Noodles
--------------------
1/2
pound of your choice of oriental noodle prepared accordng to directions (if you can read them)
Stir Fry
--------------

package of frozen multicolored pepper strips with onion
1
package of pre-cooked chicken breast strips
2T peanut oil
1T sesame oil

Directions

Prepare the sauce:

In a sauce pan combine the peanut butter, chicken broth, soy sauce, Tabasco sauce and sesame oil. Bring to a boil, constantly stirring until the peanut butter dissolves in the broth. Reduce to a simmer and set on the back burner while preparing the stir fry itself.

Prepare the stir fry: Add your peanut oil to a hot wok or heavy saute pan and add the pepper and onion mixture over high heat. Continue to stir fry and add the chicken strips continuing to cook until heated through. Add the sesame oil as extra flavor.
4.
Assemble: once the noodles are ready add them to the finished stir fry. Pour the peanut sauce over that and mix well. Serve hot.
