Description:

One of the first Dessert recipes I learned as a line cook. Definatley a crowd pleaser. Recipe is a little rusty

Ingredients

peeled and seeded quince
1
gallon water
1
whole vanilla bean (scraped)
1
cloves
2
star anise
1/4
c sugar
1
c flower
1/2
lb butter

Directions

For Topping:

1.Mix sugar, flower, and butter together until mixture forms small balls.
3.
2. Bake in 350 degree oven ~20 minutes or until brown and crispy

3. keep separate from quince until ready to serve

Filling:

1. Poach quince in 1G water with aforementioned vanilla bean, 2 cloves, and 2 star anise for approximately 45 minutes or until quince is tender
7.
(Note: Poaching liquid is save able and quite tasty as a reduction)
