Description:

This is personally my favorite Kugel dish. (I am not a big fan of the noodle variety) But this is a family recipe that is very delicious and a bit healthier for you too! We always serve it as side dish with the meal but it would work as a dessert as well.

Prep:

1hour (for baking time) prep is only a few minutes

Ingredients

eggs, separated
1
cup sugar
1
box of Raisins (not the snack size use as much as you like)
1
cup grated carrots (this is about 2 large carrots, cleaned and peeled, more or less for taste)
1/2
cup matzo meal
1
tsp cinnamon

Directions

1.
1. Beat the egg yolks together make sure they are throughly blended.
2.
2. Add the sugar in gradually and slowly.
3.
3. Blend in the rest of the ingredients (raisins, carrots, matzo meal and cinnamon), and set aside.

4. In a separate bowl, beat the egg whites until they are stiff, this is best done with a mixer.
5.
5. Fold the beaten egg whites into the carrot and nut mixture.
6.
Step6Pour the final mixture into a greased (if necessary) square cake pan.
7.
Bake for 1 hour at 325 degrees
8.
Cut (like brownies) into squares and enjoy!
