1/2 cup Red Kidney Beans (Rajma)

medium Onions finely chopped

inch cube Ginger finely chopped
6-8
cloves Garlic finely chopped

medium Tomatoes chopped

tspn Garam Masala Powder

tblspn Chopped Fresh Coriander
Directions

If you have time, soak rajma overnight in 5 cups water. Otherwise, put in a heavy pot and bring to boil with 5 cups water. Turn flame down and simmer for 5 mins and then turn heat off and let it sit uncovered for an hour. then boil or pressure cook until well cooked, soft and easy to squish between your fingers.

Heat oil add bay leaves, Black Cardamom, and onions and saute till onions are golden brown. Add ginger and garlc and cook another minute.

Add red chilli powder, coriander powder, turmeric powder and cumin powder and stir. Add chopped tomatoes and salt and cook till thet are well done and and the oil leaves the sides of the mixture.

Add Rajma along with the cooking liquid and cook on low flame for 15mins, stirring inbetween. Add garam masala powder and cook another 5 mins.

Garnish with chopped coriander and server with steamed rice.
