Cook for 30-40 minutes

Servings:

Ingredients
5 slices bacon or side meat
2 cups of cooked rice
3/4 cup of chopped onion
2 cups of canned tomatoes
1/2 tsp. of salt
1/2 tsp. of pepper
1/2 tsp. of hot sauce

Cooking Instructions
Step 1 In a 10-inch cast iron skillet, cook bacon and reserve grease.
Step 2 Crumble bacon and set aside.
Step 3 Saute onions in reserved bacon drippings until tender.
Step 4 Add tomatoes, rice, salt, pepper and bacon.
Step 5 Cook on low heat for 30-40 minutes, stirring and adding water as needed.
Step 6 Add hot sauce and serve.
