| 5 | slices bacon or side meat |
| 2 | cups of cooked rice |
| 3/4 | cup of chopped onion |
| 2 | cups of canned tomatoes |
| 1/2 | tsp. of salt |
| 1/2 | tsp. of pepper |
| 1/2 | tsp. of hot sauce |
Cooking Instructions
| Step 1 | In a 10-inch cast iron skillet, cook bacon and reserve grease. |
| Step 2 | Crumble bacon and set aside. |
| Step 3 | Saute onions in reserved bacon drippings until tender. |
| Step 4 | Add tomatoes, rice, salt, pepper and bacon. |
| Step 5 | Cook on low heat for 30-40 minutes, stirring and adding water as needed. |
| Step 6 | Add hot sauce and serve. |
