chicken, whole, approx. 4 lb.

Jar (10 oz.) Orange Marmalade

tsp. allspice, ground
1/8
tsp. black pepper, ground
Directions

1. Preheat oven to 375 degrees F.

2. Remove gizzards from chicken, set aside. Quickly rinse chicken under cold water before putting in roasting pan.

3. Mix spices together and rub into chicken's surface.
4.
4. Pour marmalade over chicken, coating thoroughly. Cover roasting pan.
5.
5. Bake in oven for approx. 85 minutes. Turn chicken at least 3 times during cooking.
