lb Granny Smith apples (4), peeled, cored, and chopped

garlic cloves, quartered

tsp chopped fresh marjoram or thyme

Simmer all ingredients in a 3-quart heavy saucepan, covered, stirring occasionally, until apples fall apart and garlic is tender, about 15 minutes. Mash garlic into applesauce. Season with salt and pepper.
