Ingredients

tbsp oil
1
large onion chopped into small pieces
pinch of cumin seed

tsp fresh crushed ginger
1
tsp fresh crushed garlic

whole cloves
1
stick of cinnamon
2
bay leaves
1
tsp pepper
1
small tomato sliced
1/2
pound fresh spinach (washed and chopped)
2
tsp salt or to taste
1/2
tsp turmeric powder
1
tsp ground coriander
1
tsp cumin powder
1/2
tsp garam masala
1
cup whipping cream (alternate Soys cream for healthier option)
1
tsp tomato puree
Paneer - Indian Cottage Cheese ( You could substitute with Tofu for healthier option)

Directions

1.
1. Heat oil in saucepan and cook the chopped onion until it turns light brown.
2.
2. Add cumin seed, cardamom, cinnamon stick, bay leaves, cloves, ginger, garlic, sliced tomato and pepper and let it cook for about 30 seconds.
3.
3. Add chopped spinach and saute it, stirring until it changes colour turning dark green, by now it is about half cooked and still remains crunchy.
4.
4. Add salt, cumin, turmeric, coriander powder and garam masala. Mix well with spinach while it is sauteeing.
5.
5. Add cream, tomato puree, cubes of paneer cheese or Tofu if preferred.

6. Stir it often

7. When cream boils and turns thick, cook another 1 1/2 minutes over high heat and then serve.
