Ingredients

tbsp superfine mustard powder

tsp ground black pepper

1/2 tbsp organic butter

link of chorizo sausage (chopped small)

stalks of scallions (chopped small)

tsp fresh thyme leaves (take three stems and take the leaves off)
Parmesan cheese for garnish
Directions

Beat the eggs with a dash of milk

Add the mustard powder, salt and pepper. Whisk

Heat a large frying pan

Add the chorizo and cook for about 3 minutes

Add the scallion and thyme, cook for another minute
8.
Add the egg mixture and stir until cooked how you like it.

Serve and sprinkle a little cheese on top.
