Ingredients

medium onion chopped (approx. 1 cup)
1
envelope onion soup mix (1.12 ounces)
1
can beef gravy (10 1/2 ounces)
1
can whole kernel corn drained (16 ounces)
1
can sliced carrots (or equivalant fresh carrot slices)
5
cups mashed potatoes (instant is okay)
1
cup fresh sliced mushrooms (canned are okay)
Directions

Preheat the oven for 350 degrees. In a large skillet brown the ground beef, and onions (also mushrooms if you choose to use them). Drain the left over liquid/grease. Add the soup mix, gravy, garlic powder, and pepper. Mix well. Then add the corn, carrots, and peas. Mix well again.

Place the mixture into a 2 quart casserole dish that has been coated with a nonstick spray (such as Pam), spreading evenly. Spread the mashed potatoes ontop evenly sprinkle on paprika if desired. Bake uncovered for 25 minutes or until cooked thoroughly. Let cool a few minutes and enjoy!
