Ingredients

Shorts Ribs (bone in about 2 inches x 5 inches)

small can of tomato paste
Directions

Heat oven to 250. Season ribs with salt, pepper and flour. Brown in a pan that will hold all the ingredients. Take out of pan and sweat vegetables for five minutes. Add tomato paste and cook until it loses it bright red color and browns. Add sherry and reduce until little is left. Add soy sauce and and reduce. Return ribs back to pan and add chicken stock, bay leaf and thyme. Bring to a simmer and cover tightly with lid and foil. Put in oven for 4 to 5 hours.

Strain sauce and reduce until thick consistency.
