4 medium dried shiitake mushrooms.
1 T sugar
3 T soy sauce
2 T Mirin (Japanese cooking wine)
1 Scallion
2 Toasted Nori Sheets
2 2/3 cup prepared sushi rice (I added the recipe to the site)
1 tsp Wasabi Paste

Cooking Instructions
Step 1 Cover the mushrooms with 2/3 cups of coiling water and let soak for 20 minutes.
Step 2 Pour into a small strainer.
Step 3 Save the strained water for later.
Step 4 Rinse the mushrooms carefully and remove the stems.
Step 5 Bring the mushroom-soaking water, sugar, soy sauce and mirin to a boil. Let the mushrooms simmer in this broth for 10 minutes. Stir occasionally. Drain and let them drip dry. Cut the mushroom caps into strips.
Step 6 Wash, clean and dry the scallion and cut into tiny rings. Cut each nori sheet crosswise in half. Prepare Maki sushi, using the rolling mat by mixing the prepared ingredients, the rice and the wasabi paste. Cut the sushi rolls into four equally large pieces and arrange them with the cut edge facing up.
