Directions

Soak the shiitakes overnight in a bowl full of water.
2.
Cover them with a plate to keep them down.
3.
The next day, keep 1/2 cup of the water the mushrooms soaked in.
5.
Remove the stalks from the shiitakes.
7.
Stir fry the shiitakes on high 5 minutes while stirring.
9.
Add the soy sauce and sugar.
10.
Cook until all the juice has evaporated while stirring.
11.
Add the oil and remove from heat.
