Skillet Fried Barbecue Chicken

Ingredients

3
lbs chicken legs
Cooking spray
¼ cup ketchup
1
Tbsp soy sauce
2
Tbsp brown sugar
1
Tbsp Worcestershire sauce
¼ cup honey
2
Tbsp vegetable oil
2
tsp barbecue seasoning

Directions

1.
1.In a small bowl, mix together ketchup, soy sauce, brown sugar, Worcestershire sauce, honey, oil and barbecue seasoning. Once all ingredients are combined, whisk together.

2.Spray skillet with cooking spray.

3.Warm skillet to 350 degrees.

4.Place chicken legs in skillet and lightly fry for 3 minutes each side until lightly browned.

5.Baste sauce onto one side and fry for 2 more minutes, turning and basting other side. Cook for a further 2 minutes.

6.Turn down heat to 250 degrees and baste and turn chicken legs for a few minutes each side until sauce is finished. While the legs are cooking, check often that the sauce is not burning. Each time you turn the chicken, coat the pieces in the sauce to ensure an even consistency.

7.Turn skillet down to 200 degrees and cover with skillet lid.

8.Cut one piece of chicken to check the middle is cooked evenly. No pink!
9.
9.Serve with oven fries or mashed potatoes. Place cooked green vegetables of your choice on the side.
