Ingredients

1
pound of peeled potatoes
6-10
cloves of minced garlic
3/4
C of Greek extra virgin olive oil (I like spitiko brand)
1/3
cup of white wine vinegar
1
tbsp of salt
1/2
tsp of freshly ground black pepper
Food processor
Quantities can vary according to taste, I don't really measure for this one, and you can certainly change the quantities to adjust to your liking.

Directions

1.
Boil potatos in salted water until well done.
2.
Sprinkle with pepper and mash them until very cream and not lumpy.
3.
In the food processor, puree the potatoes and garlic until they are combined well.
4.
Keep pureeing and add the olive oil and vinegar slowly, first a little oil, then a little vinegar, then a little oil...you get the idea.
5.
When the mixture is creamy and smooth it's ready.
6.
Serve with a plate of pita, cucumbers, stuffed grape leaves, Greek bread and oil.
