Sobrebarriga a la criolla
we love this dish, it has been in my family since my great grandmother. Perfect if paired with white rice and a nice avocado salad, also with hard boiled potatoes with skin.

| get a poun of flank steak sikrt per every 2 people, a bunch of fresh cilantro, salt, pepper, garlic, tonatoes and scallions and quarter cup of olive oil |
Cooking Instructions
| Step 1 | wash the meat with cold water and lemon, bring it to a boil one hour per pound until is really tender with a big round white onion cut in quarters and salt to your taste. When the meat is really soft prepare a nice sauce with the scallions, tomatoes and garlic diced or cubed, chopped cilantro and a quarter cup of olive oil and pepper to taste. Start shredding the meat and mixed with the sauce, sprinkled with a lots of chopped cilantro. Serve it hot. Great with a nice Malbec. Good appetite! |
