Description: This recipe comes directly from my mother. You can add whatever types of sausage or cheese you like. In this case I used an apple sausage. It added just a bit of sweetness to make the dish interesting.
Ingredients
- 3 small potatoes sliced thin in mandoline
Olive Oil
1/4 onion sliced thin in mandoline
1 sausage or chorizo
1/2 cup your favorite cheese
4 eggs (scrambled with a dash of milk)
Directions
Spanish Style Omelet:
Blanch Potatoes in boiling water
Drain the potatoes
Add olive oil to a pan and heat
throw in the potatoes and lightly fry until golden brown (less than 5 minutes)
Take potatoes out, drain set aside
Fry the chorizo or sausage in oil
In a pyrex container spray with non-stick oil spray
Add a layer of potatoes
Add a layer of onions
Add a layer of Chorizo
Add a layer of your favorite cheese
Add 4 scrambled eggs
Bake for 40 minutes

Add a reviewWell,the recipie is perfect, but it is hard to do. I like more onion instead of chorizo.
