vidalia onions (peeling membranes will help batter stick)
Directions
1.
sift dry ingredients in large bowl. create a hole in the middle and add egg yolk. Then gradually whisk in beer.
2.
Add onions to plain rice flour and coat so wet mixture will stick better. Then dip into wet batter. Try dpuble dipping if you want very crusty rings. Just reflour then redip in batter.
3.
Fry unil light golden color in 350 degree oil. Must have at least 2+ inches deep of oil. Wait until oil gets back up to temp before next batch.
4.
Dry on paper towles and lightly salt if desired.
