Salt and pepper
1/4
cup olive oil
1
chopped yellow onion
1
clove garlic, chopped
2
cups red wine
2
cups beef broth
3
sprigs rosemary
8
oz chopped tomatoes
1
chopped jalapeno
2
tbsp ketchup
1
tbsp maggi sauce (a-1 will also work)
2
tbsp hot sauce
Heavy large frying pan
Pressure cooker
dutch oven
roasting pan

Directions

1.
Heat your oven to 350 F.
2.
Sprinkle the lamb shanks with salt and pepper.
3.
Heat the olive oil in a large frying pan.
4.
Sear the lamb shanks for 2 minutes on each side.
5.
Put the lamb shanks on the roasting pan in the oven while you do the next step.
6.
To the olive oil add your onions and sautee until they are soft (about 2 minutes).
7.
Add the garlic and cook for a minute.
8.
Carefully add the wine and broth. Bring to a boil.
9.
Add the rest of your ingredients.
10.
Put the lamb shanks and the sauce in the pressure cooker.
11.
Set to high and pressure cook for 50 minutes.
12.
During this time you can make your sides and veggies, I made mashed potatoes and brussel sprouts)
13.
When the pressure cooking is done, put the shanks with the sauce in your dutch oven.
14.
Put in your oven for 30 minutes at 375 F.
15.
When they are done, serve the shanks with a bit of sauce sprinkled on top.
