Ingredients
250g chorizo, cut into ½ cm thick slices
1kg potatoes, peeled and cut into 3 x 3 cm cubes
5
cloves of garlic, finely chopped
¼ cups chives, finely chopped
Directions

1) In a heavy-based casserole, sautée the onions and garlic until translucent.

2) Add the sliced chorizo and continue frying for 1 - 2 minutes, so that the oils start to separate out of the sausages.

3) Make sure that the potato cubes are nice and dry and add them to the pan. Stir-fry for another minute or two.

4) Add the paprika, harissa paste and enough water to cover the potatoes. Bring to the boil and add the saffron threads, oregano and black pepper.

5) Simmer over medium heat for 30 minutes.

6) Stir in carefully three quarters of the chives. Check saltiness and season if needed. Continue cooking for 5 minutes.
7.
7) Remove from heat, garnish with the remaining chives and serve at once.
