St Patricks Day Irish Bacon and Cabbage Soup

Ingredients

1/2
pound Irish bacon, diced
1
(15 ounce) can diced tomatoes with juice

large potatoes, peeled and cubed
1
cup chicken stock, or as needed
2
cups thinly sliced dark green Savoy cabbage leaves
Salt and black pepper to taste

Directions

1.
Place bacon in a large, deep saucepan.
2.
Cook over medium high heat until evenly brown.
3.
Drain off any excess fat.
4.
Stir in potatoes, tomatoes, and enough chicken stock to cover.
5.
Season with salt and pepper.
6.
Bring to a boil, reduce heat and let simmer for 20 minutes, or until potatoes are tender.
7.
Stir in cabbage and allow the soup to simmer for a few minutes longer before serving.
