trim bok choy & cut crosswise into ¼ â thick slices. In a bowl, stir together water, soy, and oyster sauce in a 10 to 12 â heavy skillet. Heat oil over moderately high heat until hot but not smoking and stir fry bok choy with salt for 2 min. Add soy mixture and butter and continue to cook for 1 to 2 additional min.
