Description:

Stovies is a traditional Scottish dish, often made in Winter as a dish to warm you up on cold days. It is mainly made up of strips or chunks of meat (usually lamb) and sausages mixed with mashed potato, and is served piping hot with gravy and oatcakes. The dish uses ingredients which can be used from leftovers, so is very cheap to make.

Ingredients

sausages (beef or pork)
Roasted lamb or beef (leftover)

potatoes

pint gravy
1/2
cabbage
butter or cream
salt and pepper for seasoning

Directions

1.
Peel and boil the potatoes and mash well with butter or cream to make a smooth mash.
2.
Cut the cabbage into thin strips and boil until tender.
3.
Fry or grill the sausages and cut into bitesize chunks. Cut leftover lamb or beed into similar size chunks.
4.
Mix the meat, sausages, cabbage and potato together in a large dish.
5.
Make a thick beef gravy (you can make a quick one using gravy granules, following the instructions on the packet or tin.)
6.
Gradually stir in the gravy until the mixture just starts to become sloppy. Season well.
7.
Turn the stovies into a large baking dish until you are ready to eat. Put it in the oven for half an hour or until the stovies are piping hot. Serve with oatcakes.
8.
(You can experiment using different types of meat, adding different vegetables and seasoning.)
