Description:

This is a dish from the Pacific Coast of Colombia (from the city of Buenaventura). Sadly it was a beautiful port city and now it's one of the most dangerous places in Colombia. Hopefully things will change. In the mean time, we can remember the good times by making this amazing dish from the area. Just beware, this is a treat high in cholesterol, so keep it for special occasions only.

Ingredients

large avocados
2
lbs small shrimp
1/2
cup of mayonnaise
1/2
cup ketchup
juice of 4 lemons
2
cups white vinegar
4
yellow onions (peeled and chopped)
4
garlic cloves (finely chopped)
1/2
tbsp thyme (finely chopped)
1
tbsp cilantro (finely chopped)
2
hard boiled eggs (crumbled)
Salt and pepper to taste

Directions

1.
Wash the shrimp and throw into boiling water for 2 minutes (you can use pre-cooked shrimp).
2.
Dry them and let them cool.
3.
In a bowl mix the lemon juice, vinegar, onion, garlic and thyme (you can do this in the food processor depending on how you like your consistency).
4.
Add the shrimp, mix well and put in the fridge for an hour.
5.
If there is any extra liquid after you've refrigerated it, drain it out.
6.
Mix with the mayonnaise and ketchup.
7.
Cut the avocados in half.
8.
Remove the pit.
9.
Fill with the shrimp mixture.
10.
Sprinkle with chopped cilantro and the crumbled egg.
11.
Serve cold.
