Stuffed Peppers

Stuffed Peppers

I'm a Fan Too

Description:

I found this recipe on a website. I've only made it a few times but my super picky mother likes it enough to ask for it so I'm guessing that's a pretty good indication of whether it's a good recipe or not.

1 hour 20 minutes

Ingredients

6
medium green peppers
1
lb ground beef
1
chopped onion
1
(6 7/8 oz.) box Rice-A-Roni, Spanish Rice flavored
1
(16 oz.) can tomato sauce
1
t. sugar
1
cup shredded cheddar or American cheese

Directions

1.
Remove tops and seeds from peppers; parboil for 5 minutes and drain. Place into foil-lined baking dish.
2.
Prepare the Rice-A-Roni according to package directions.
3.
Meanwhile, combine ground beef and onion in a medium saucepan and cook together until browned. Drain and set aside.
4.
Combine cooked rice and cooked beef mixture. Use to fill peppers.
5.
Mix the sugar with the tomato sauce and then pour sauce AROUND the peppers (not over).
6.
Cover baking dish with foil and bake at 350 degrees for 35 minutes.
7.
Uncover, top with shredded cheese and then bake for another 5 minutes or until cheese is melted.
8.
Serve with tomato sauce from pan.
