1/2 cups Stuffing Mix (use Stove Top or make your own)
To the stuffing add 1/2 cup dried chopped apricots

Pork Chops, Cut With Pockets (ask meat dept or butcher to prepare pork chops with pockets)

Preheat the oven to 350 F degrees. Prepare the stuffing. Stuff the pork chops with stuffing. Fasten opening with wooden picks. Place stuffed chops flat side down in single layer in shallow baking pan; Leave ample space between the chops Sprinkle with salt and pepper. Cover pan with aluminum foil. Bake at 350F degrees 45 minutes. Uncover and continue baking about 20 minutes or until browned and tender. After you remove foil, watch carefully. Do not overcook or they will become rather tough and dry.
