Description:

A satisfying and simple to prepare dinner that you can make ahead or even freeze for later use.

Prep:

20 minutes preparation, 30-40 minutes cook time

Ingredients

package giant shells
1
jar (25oz) marinara sauce
16
oz ground beef or ground turkey
4
oz ricotta cheese
4
oz cream cheese
1/2
cup shredded cheese
1
egg
1/2
cup diced onion
1/4
cup chopped mushrooms
1/4
tbsp dried basil
1/4
tbsp dried thyme
1/4
tbsp dried oregano
Salt and pepper to taste

Directions

1.
Preheat oven to 375°. Spread a thin layer of marinara sauce to cover bottom of baking dish.

Cook shells according to directions. Drain and separate shells, laying them on waxed paper so they don't stick to each other. Cook ground meat (either beef or turkey) until it is done, draining away any fat. Combine meat with ricotta, cream cheese, shredded cheese, egg, mushrooms and herbs. Mix until uniform.

Holding shell in one hand, use spoon to scoop up meat mixture and insert it into the shell, being careful not to break the shell. Fill each shell up without overfilling. Place in baking dish with sides touching. Pour additional sauce over shells to cover them. Cover tightly with foil and bake for 30-40 minutes, until hot and bubbly and cheese appears melted. Top with additional cheese or sauce and serve hot.
