Dice large heirloom tomato, julienne ¼ of a large Spanish onion, cut corn off cob with sharp knife, toss all veggies together and add teaspoon olive oil, splash vinegar, salt & pepper to taste as well as any favorite dried herbs. Add 1 teaspoon of crumbled blue cheese and incorporate into veggie mixture. Cube ripe avocado and gently mix into other ingredients, so as not to crush the avocado cubes.

This salad can be made without the corn or without the blue cheese (if looking for a vegan alternative). But if you've got leftover corn on the cobb this is a great way to use it.
