Method: 1. Quarter the potatoes, then cut thick slices out of each quarter. Shallow fry, drain excess oil, arrange in a dish and keep aside. 2. Finely chop the onions, tomatoes & garlic. And cut the capsicum lengthwise. 3. Heat Gingelly/sesame oil in a deep pan - for this dish to be âheavenlyâ you must use gingelly oil - and when the oil is hot enough, drop in the onions and garlic and sauté till golden brown. 4. Add the tomatoes and cook till oil leaves the sides. 5. Drop in the capsicum, stir it about for a minute, just leave it crunchy. 6. Add sugar, salt and mix for a minute. 7. Add the soy sauce, and check if all the seasoning taste fine. 8. Remove from fire, spoon over the potatoes & finally garnish with coriander or cilantro.
